Topic: Sunchokes

The Victory Seed project is introduced as a movement to encourage home food production as a defense against food shortages. Westbrook recommends growing high-calorie root vegetables like potatoes and Jerusalem artichokes (sunchokes) because they can be stored in the ground, making them less visible to outsiders. The goal is to create a network of "Victory Gardens" where neighbors share seeds and knowledge to bootstrap local production.
